CARROT CAKE PROTEIN MUFFINS
We heard so many good things about our banana muffin recipe that we thought we should share another simple protein muffin recipe! These carrot cake muffins are made in one bowl and take about 30 minutes from start to finish. The recipe is simple enough that kids can help with every step. These are a perfect breakfast for kids and adults alike! They also make a great snack for before or after sporting events or traveling in the car.
VARIATIONS ON THIS CARROT CAKE PROTEIN MUFFIN RECIPE
If you don’t have access to Kodiak Cakes (we usually buy ours on Amazon or at Costco) you can also make these like our other protein muffin recipes by using oats and/or oat flour (totaling 2 cups) in place of the Kodiak Cake mix listed. You may need to adjust the amount of sweetener and/or liquid you use if you make this substitution so taste test the batter! Also, add 1 tsp baking powder and 1/2 tsp baking soda.

Carrot Cake Protein Muffins

These Carrot Cake Protein Muffins are easy, delicious, and healthy! Bonus, they also have over 5 grams of protein!
Ingredients
Scale
- 1 cup finely grated carrots
- 1 egg
- 1 cup unsweetened almond milk
- 1 tsp pure vanilla extract
- 1/3 cup coconut sugar (any granulated sugar of your choice)
- 1/4 tsp sea salt
- 1 TBSP ground cinnamon
- 1/2 tsp ground nutmeg
- 2 cups Kodiak Cakes Power Cakes Mix
Instructions
- Preheat oven to 350 Fahrenheit and lightly grease a muffin pan (or use baking cups)
- Mix all ingredients, excluding Kodiak Cakes together in a large mixing bowl
- Stir Kodiak Cakes mix into the wet ingredients until just combined
- Pour batter evenly into the muffin pan then place in the center of the oven for 20-25 minutes or until a toothpick inserted in the center comes out dry
- Let cool and enjoy!
