CLEAN EATING COOKIE DOUGH ICE CREAM SANDWICHES
Warm weather and ice cream go hand in hand. I wanted to try making edible cookie dough into ice cream sandwiches and succeeded! This recipe is super easy to make and it’s fun for kids.
The hard part is waiting for the cookie dough to freeze! You’ll need it to freeze for approximately 24 hours so plan in advance. We wanted to eat the dough right away but we settled for licking the spoon instead. 😉
OUR FAVORITE INGREDIENTS:
NUT BUTTER
Use cashew butter or almond butter for this recipe. The ingredients in your nut butter should be nuts and salt (that’s it!). If your nut butter does not contain salt you may need to add an extra dash to the recipe. You can taste it once it’s mixed to see if additional salt is needed.
DARK CHOCOLATE CHIPS
You can either purchase a dark chocolate bar (70% or higher) and then break the bar up into chunks (we use a meat tenderizer) or use dark chocolate morsels.
ICE CREAM
We love Halo Top and Enlightened Ice Cream. They both have dairy and dairy-free options. You can find them in the freezer section in most grocery stores. The nutrition facts/macros listed in this recipe do not include ice cream since the macros will vary depending on which brand you use.

These Clean Eating Cookie Dough Ice Cream Sandwiches are the perfect warm-weather treats! They are easy and fun to make!
Ingredients
- 1/4 cup brown rice syrup or honey
- 2 tsp pure vanilla extract
- 1/4 cup cashew butter or almond butter
- 1/4 tsp sea salt
- 1/3 cup coconut sugar or date sugar
- 1–3 TBSP unsweetened non-dairy milk
- 1 cup gluten-free oat or almond flour
- 1 cup cacao nibs or dark chocolate chips
- 6 scoops of ice cream (we use Halo Top or Enlightened)
Instructions
- Mix syrup, vanilla extract, nut butter, salt, sugar, and one tablespoon of almond milk together in a medium-sized bowl.
- In a separate bowl, mix flour and chocolate chips together.
- Stir the dry ingredients into the wet ingredients. Add more milk if it’s too crumbly.
- Scoop out the dough and place 12 spoonfuls on a piece of wax paper on a cookie sheet. Flatten with the back of the spoon to make “cookies.” Place in the refrigerator for 24 hours to set.
To Assemble:
- After the cookie dough has set in the freezer, use a metal spatula to remove two cookie dough cookies.
- Add one scoop of ice cream on top of one of the cookie dough cookies then close like a sandwich with the other cookie.
