Roasted Sweet Potato Cubes

These sweet potatoes melt in your mouth they are so good! I’ve been having them with my eggs for breakfast, but love them any time of day. I always knew I loved sweet potatoes like our restaurant-style baked sweet potato recipe. After trying this recipe, I realized just how versatile they truly are. While naturally sweet, this potato is one that can adapt to either sweet or savory meals.

Benefits of Sweet Potatoes in your Diet

In a world where starches get a bad rap, I love seeing all of the wonderful benefits of eating sweet potatoes. Yes, they are a starchy vegetable, but their health benefits make them a great starch to add to your plate. Knowing this makes me feel zero guilt about having these as a side dish, breakfast, or even a small dessert!

Benefits of eating sweet potatoes regularly: 

  • High in fiber for the healthy gastrointestinal system
  • Rich in vitamin C for your immune system
  • Include B Vitamins for energy and overall health
  • Beta carotene for eye health and as an antioxidant
  • Around 4 grams of natural plant protein per 1 cup serving

What meals will these sweet potatoes compliment? 

As I mentioned above, I really enjoy a serving of these sweet potato cubes alongside my eggs at breakfast. However, many prefer these as a side dish to lunch or dinner. My only suggestion is that you balance these with a good amount of protein and green leafy vegetables if using as a heavier meal in your day.

How to cut sweet potato cubes

One of the biggest complaints I have read about cooking sweet potatoes is in how to cut them. As this recipe requires them to be cubed before you bake, it may seem like a big undertaking. The truth is – cutting sweet potatoes can be very simple!

Since sweet potatoes have a denser flesh and are often oddly shaped, it can be a struggle to safely cut them. While I know some want to remove the skin, I highly recommend simply washing them well and leaving the skin on the potato. This removes one of the more frustrating parts of cooking them.

How to cut the sweet potato? The easiest way is to slice the potato in half so you have a flat side to work with. From there, you can cube into the size desired. Another favorite method of cutting them is to use a vegetable chopper. There are many options on Amazon including the ONSON Vegetable Chopper which comes with multiple blade options for making square dices or cubes.

Ingredients

Scale
  • 4 Sweet Potatoes (medium size)
  • 2 Tbsp Coconut Oil, melted
  • 1 Tbsp Cinnamon

Instructions

  1. Preheat oven to 400 degrees
  2. Wash & cut sweet potatoes into cubes
  3. Lay sweet potatoes flat on a baking sheet (in one layer)
  4. Melt coconut oil in microwave (approx 30 sec)
  5. Drizzle sweet potatoes with coconut oil & sprinkle with cinnamon
  6. Bake for 15-20 minutes
  7. Flip sweet potatoes & bake for another 15-20 minutes
  • Prep Time: 10 minutes
  • Cook Time: 40 minutes
