Chocolate Avocado Dessert Pudding Clean Eating Recipe

We love making healthy desserts with unexpected ingredients and this one is no different. Who knew you could make an avocado dessert actually taste sweet and delicious? I sure didn’t! This one definitely blows my mind!

When we set out to eat clean, it was pretty quick that I noticed there were some foods that would be off-limits. Missing out on creamy puddings, sugary treats, and desserts from the grocery store seemed pretty daunting. Luckily, I have found tons of ways to make even better treats – and this avocado dessert is definitely a favorite.

How to make a smooth pudding

My personal opinion is that the secret to this recipe is in using my Vitamix blender to process the ingredients. If you don’t have a Vitamix, any blender or even food processor will work well for making this pudding fast and easily.

Other tips for making the perfect pudding: 

  • Make sure all ingredients are the same temperature so they combine well. (This is important with this particular pudding but not always with cooked puddings).
  • Use a quality blender or food processor that will give you the smoothest result
  • Sift your dry ingredients into the blender to avoid clumps and lumps – especially helpful with the cocoa powder

How to pick a ripe avocado

One of the worst things is when you slice into an avocado and find it to be overly ripe or rock hard. For this recipe especially, you will want a perfectly ripened avocado. My tips below work well for when I am looking for an avocado that will be easy to slice or blend until smooth.

  • Choose a darker green avocado
  • They should feel slightly firm to the touch, but soft enough that there is a slight give when squeezed
  • If not ripe when purchased, simply place in a brown paper bag alongside an apple or banana for 2-3 days

Can I add more chocolate to my avocado pudding? 

Of course, you can! I love using Lily’s chocolate chips or any good dark chocolate as a healthy alternative, and they can easily be added into the pudding for a chocolate bite. Another option is to melt the chocolate chips and allow them to cool before pouring in with the other ingredients to blend until smooth.

Tip: Add a small amount at a time until you reach your desired level of chocolate flavor.

Ingredients

Scale
  • 2 avocados
  • 1 scoop vanilla protein powder
  • 1 cup unsweetened almond milk
  • 2 Tbsp chia seeds
  • 1.5 Tbsp cocoa powder
  • 6 small scoops stevia
  • pinch sea salt

Instructions

  1. Add all ingredients to a Vitamix and blend until desired consistency is reached
  2. Place in refrigerator for 30 minutes to one hour or until chilled

    How much stevia is in a “small scoop”? Can you give it to me in teaspoon measurements?

      Hi Nancy! If you are using a powdered stevia (like this one) you will just use 1-2 scoops using the small little spoon included. I did a little research and it looks like it’s equivalent to 1/32 teaspoon.

      We also love Splenda Naturals (like this one), where the serving is 1/2 tsp so it really depends. What kind of stevia are you using?
