SESAME CUCUMBER SALAD
This super simple sesame cucumber salad is a quick and ready side dish. It takes less than ten minutes to throw together and tastes better as it marinates over time!
Not only is this recipe great for you if you don’t have much time to prep in advance but it’s also a fantastic recipe for those who struggle to eat enough veggies.
P.S. A veggie slicer will really help save even more time on this recipe (plus plenty of others!).
HOW TO MAKE THIS A COMPLETE MEAL
While this salad is not substantial enough to eat as a meal on its own you can add grilled teriyaki chicken (here’s our guide on How to Grill Chicken) and rice to have a complete and delicious meal! You could also add radishes, and/or avocado, or even eat this over a handful of greens for extra veggies.

Description
This Sesame Cucumber Salad is for you if you don’t have a lot of time to meal prep. It’s quick and easy to make and even better leftover!
Ingredients
- 2 cucumbers, thinly sliced
- 2 carrots, thinly sliced
- 1/4 red onion, sliced thin
- 2 TBSP fresh cilantro, chopped
- 2 TBSP rice vinegar
- 2 tsp sesame oil
- 1 tsp honey (brown rice syrup if vegan)
- 1 tsp sesame seeds
- 1/2 tsp salt
- 1/4 tsp black pepper
- Dash of red pepper flakes
Instructions
- In a large mixing bowl stir together: vinegar, oil, honey, sesame seeds, salt, pepper, red pepper flakes, and cilantro
- Dice or thinly slice the red onion, carrots, and cucumbers and add to a bowl. Toss with the dressing made in the first step.
