CUCUMBER, AVOCADO, & FETA SALAD
A salad that kids like?! Yes, it does exist and this salad is just that! My friend’s kids eat it for lunch and dinner. But, of course, adults will like it too!
This tangy salad only takes 5-10 minutes to toss together and it can be stored in the refrigerator for up to three days. It is great topped with Greek Chicken or regular grilled chicken seasoned to your taste or leave off the protein and eat it as a side dish. For an extra tangy salad add a squeeze of lemon juice if desired.
This is the perfect salad to take to cookouts (double or triple the recipe) and add as is to your weekly meal prep each week. It’s so good!

Ingredients
- 2 cucumbers, cut into chunks
- 1 avocado, cut into chunks
- 1/3 cup feta cheese, crumbled
- 1/2 red onion, diced
- 1 TBSP distilled white vinegar
- 1/4 tsp ground black pepper
- 1/2 tsp sea salt
Instructions
- Combine vinegar, salt, and pepper in a medium-size salad bowl
- Dice the onion and chop the cucumber & avocado, then stir into the vinegar in the mixing bowl
- Stir in feta and serve cold
