Roasted Garlic Asparagus with Balsamic Drizzle

This Balsamic Garlic Asparagus is the perfect side dish to any meal. Even our young nieces and nephews loved this. I never thought asparagus could be addictive until I made this recipe. The key to making any asparagus dish better is to include great flavors. The flavor of plain asparagus is slightly nutty but can be a bit bland. By roasting in the oven with the deep flavor of garlic and the bright acid from balsamic vinegar, you will find it tastes completely different.

How to Roast Asparagus

As you follow the directions in the printable recipe below, you will notice that while it has a ton of flavor, it is truly a simple recipe. Asparagus retains flavors well but doesn’t need a lot of extra spices to bring out the natural flavor.

When picking fresh asparagus for this recipe, you want to pick stalks that are thinner and still crisp. Limp asparagus is typically past its prime and won’t have as good a flavor or roast as nicely. Once you wash them well, you will cut off the root end. Depending on the size of the stalks, you will cut off approximately 1/4 of the lower stalk. Usually, this is the larger white area that isn’t as bright and green.

How to Serve Garlic Asparagus

This recipe pairs wonderfully with many of my favorite dishes. I love this flavor combination with my orange chicken recipe. Another option is to serve alongside grilled chicken tenders and some of these zesty grilled onions. Such a delicious clean eating recipe that is full of healthy protein and nutrients! Add a side of quinoa or brown rice and you have a meal that will satisfy even the pickiest eater at your dinner table.

Can I Freeze Cooked Asparagus? 

Yes! Asparagus typically is good when cooked stored in the refrigerator for up to 5 days. However, you may find it on sale select times of the year and decide to stock up for future meals. Not only can it be frozen in its raw state, it is great when cooked in advance. Simply wrap the asparagus in a paper towel and then wrap in plastic wrap or aluminum foil before placing into a freezer storage bag. Make sure to label with the date cooked and flavors used.

Ingredients

  • One bunch of Asparagus
  • Balsamic Vinegar (2-3 TBSP)
  • Sea Salt
  • Black Pepper
  • Minced Garlic or Garlic Powder

Instructions

  1. Preheat oven to 405 degrees
  2. Wash and prepare asparagus
  3. Place asparagus on a baking sheet lined with aluminum foil (for easy clean-up)
  4. Drizzle with balsamic vinegar. Sprinkle with sea salt, black pepper, and minced garlic or garlic powder.
  5. Cook for 8-10 minutes
