I have been wanting to make a baked oatmeal with fruit for some time now and really struggled with the type of sweetener to put in it. Once I saw the packets of NECTRESSE™Sweetener, I knew that now was the time! The amount that you need is much less than ordinary sugars and/or alternative sweetener products - which is a big benefit! The taste is AMAZING!

Baked Berry Oatmeal
Ingredients:
1 1/2 cups quick cooking oats
3 tsp cinnamon
1 tsp pumpkin pie spice
1 tsp baking powder
1/2 tsp sea salt
4 packets of NECTRESSE™Sweetener
1 medium banana, sliced
1 cup strawberries, sliced
1/2 cup blueberries
2 cups unsweetened almond milk
1 Tbsp vanilla extract
2 egg whites
Directions:
1. Preheat oven to 360 degrees F.
2. In a small, 5" diameter round ceramic baking dish, add oats, cinnamon, pumpkin pie spice, sea salt, baking powder and Nectresse. Stir to combine.
3. Slowly add in bananas, strawberries and blueberries, stirring slightly to combine.
4. In an additional bowl, whisk together almond milk, vanilla extract and egg whites. Slowly pour into baking dish to combine with oat mixture.
5. Bake for 30-40 minutes depending on oven. Let sit for 10 minutes after baking.
6. Enjoy!

Do you think this would refrigerate and reheat nicely? Or is it better to eat in one sitting? Looks delicious!

But monk fruit is not the only ingredient in Nectresse, nor is it even the primary ingredient. The first and most abundant ingredient in Nectresse is actually erythritol, a sugar alcohol commonly derived from corn, the vast majority of which has been genetically modified (GM) in the U.S. And the second ingredient in Nectresse is sugar, which is refined and more than likely comes from GM sugar beets.

I made this today and used stevia. I think next time I make I will leave the fruit out next time and just serve the fresh fruit on the top. I don't like baked fruit.

ReplyDeleteOatmeal should not be eaten with fruit, fruit should be eaten by itself and nothing else and on an empty stomach like at breakfast or 2 to 3 hours after your last meal.You must allow fruit to pass through the stomach before other foods are eaten. The reason being is it doesn't take much effort for our system to digest it except for the the more dense fruits like bannanas, avacadoes and dried fruit. Fruit passes right through the stomach and in to the intestines where it's digested.
