MAPLE ACORN SQUASH
This Maple Acorn Squash has been one of our favorite fall foods for 7 years now. I make it several times each year and I think by the end of winter my family is hoping I get sick of acorn squash. It’s super easy to throw together and makes the perfect side dish.
INGREDIENT OPTIONS
We typically purchase Kerrygold Pure Irish Butter which is made with milk from grass-fed cows. We get ours from Costco (Clean Eating Costco Shopping List) but they should be available at your local grocery store too.
When a recipe calls for brown sugar, we use Truvia’s Brown Sugar Blend. It is made from erythritol, molasses, and Stevia leaf extract. It measures and sweetens cup for cup!

Maple Acorn Squash

Description
This Maple Acorn Squash is the perfect fall side dish. The squash is topped with syrup, butter, and brown sugar and baked to perfection. It couldn’t get any easier!
Ingredients
- 1 acorn squash, cut in half & seeds removed
- 1–2 TBSP pure maple syrup
- 1–2 TBSP butter
- 1–2 TBSP brown sugar
Instructions
- Preheat oven to 400 degrees Fahrenheit
- Cut the squash in half, then scoop the seeds and stringy pulp out of the squash cavities
- Tip: Save the seeds! You can toast them for a healthy snack.
- Poke or slice a few holes in the squash cavities (just enough to puncture, don’t break through the skin)
- Put one tablespoon of butter and brown sugar in each of the squash halves, then drizzle maple syrup over the top
- Place squash on a baking sheet and bake for 45 minutes
- Remove from the oven, the squash should be fork tender
