Description

These Snickerdoodle Protein Bites are soft, chewy, and full of flavor. Best of all, they only take 5 minutes to make!


Ingredients

Dough:

  • 20 pitted dates
  • 1/2 cup unsweetened vanilla almond milk (or any non-dairy milk)
  • 1/2 cup cashew or almond butter
  • 1/3 cup vanilla protein powder
  • 1 cup rolled oats
  • 1 tsp pure vanilla extract
  • 1 TBSP ground cinnamon

Cinnamon Sugar Coating:

  • 1/4 cup almond or oat flour
  • 1/2 TBSP coconut sugar or granulated sugar of your choice
  • 1/2 TBSP ground cinnamon

Instructions

  1. Soak the dates in 1/2 cup unsweetened milk (of your choice) for an hour
  2. Make the cinnamon-sugar mixture while the dates are soaking
    1. Mix together 1/2 TSP ground cinnamon, 1/4 cup almond or oat flour, and 1/2 TBSP sugar in a small bowl, set aside
  3. After the dates have soaked, place the dates and milk in a blender and blend until it resembles a smooth paste
  4. Next, add the vanilla extract, nut butter, protein powder, rolled oats, and cinnamon. Blend again until it resembles a sticky crumble
  5. Scoop out a spoonful of the dough and place it in the prepared cinnamon-sugar coating. Roll the dough around and shape it into a ball. Place the ball in a storage container and repeat until you run out of dough (16-18 protein balls)
