Quick Meal Prep – Sausage, Quinoa, and Veggies

Back to school. It’s that time. Again. At least it is here down in the south! Even if you don’t have kids (like us), fall tends to be a pretty busy time of year. Not only is it back to school time but we have a lot of holidays coming up over the next few months!

So, whether you are busing kids to and from school and then extracurricular activities or just trying to spend some time on yourself by exercising – time is of the essence.

The one way that we combat busy schedules is by doing food prep. You know by now that we are lovers of food prep. We set aside a few hours each week (usually on Sunday) to prep our meals for the week. We strongly believe that food prep is how we have been able to maintain a healthy lifestyle for over 7 years now. We don’t eat out for lunch or cook each night {gasp!}. Instead, we eat the food that we prepped at the beginning of the week. It’s a time saver, money saver, and helps us stay on track to meet our goals.

Lately, we’ve been grilling COLEMAN ORGANIC® Spinach Chicken Sausage and Apple Chicken Sausage in bulk. They take less than 12 minutes to grill to perfection and we mix them with quinoa and grilled vegetables (usually squash and/or zucchini). It’s the perfect filling meal!

Below is how we prepared our sausage, quinoa, and veggies.

  • Sausage: You can grill on a gas grill or you can cook on the stovetop until browned on the outside and warm on the inside. This usually takes 10-12 minutes.
  • Quinoa: Bring one cup of quinoa and two cups of water to a boil. Once boiling, reduce heat to low and cover for 15 minutes. Fluff with a fork and serve.
  • Veggies: Wash and slice organic zucchini and squash. Place a handful into aluminum foil and add the desired amount of organic butter or olive oil and seasoning (we normally use steak seasoning!). Grill these in the aluminum foil packets while you grill the sausages.

I also love cutting the sausages into cubes after grilling, mixing with scrambled eggs, and wrapping that up into a whole-wheat tortilla. It makes a delicious breakfast burrito!
