Gingerbread Granola

This Gingerbread Granola is crunchy and perfect for many different recipes. It can be made gluten-free and vegan!

GINGERBREAD GRANOLA

Nothing gets me more excited to cook than cool weather. There’s just something about the cold, crisp air that inspires me to make warm seasonal recipes. Instead of our typical festive trail mix (Spring Trail Mix), we decided to make granola instead.

Gingerbread sounded like a fun and festive flavor to try this year so we added spices and molasses to get the perfect flavor.

HOW TO MAKE THIS GRANOLA

As you’ll see in the instructions below, granola can burn very easily. It is important that you check the granola every 10 minutes, max. When checking, taste a few bites to see if it is the crunchiness you are looking for.

For the brown sugar, we typically use the Truvia Brown Sugar Blend. It is a cup for cup just like regular brown sugar but is made from erythritol, molasses, and Stevia leaf extract.

For the butter, we usually use Kerrygold Pure Irish Butter which is made with milk from grass-fed cows. We get ours from Costco (Clean Eating Costco Shopping List) but it should be available in any grocery store.

HOW TO EAT THIS GRANOLA

Try adding this granola to Greek yogurt with apples for breakfast or a snack. You could also add unsweetened nut milk of your choice to this gingerbread granola for breakfast. Turning this granola into a “cereal” has been kid-approved! If you want to get really creative, add a few spoonfuls as a topping on ice cream. YUM!

This Gingerbread Granola is crunchy and perfect for many different recipes. It can be made gluten-free and vegan!


Ingredients

Scale
  • 3 cups rolled oats (gluten-free if needed)
  • 3 TBSP butter (use coconut oil if vegan)
  • 1/4 cup molasses
  • 1/4 cup real maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/4 cup brown sugar
  • 1 cup nuts (try pecans, walnuts, and/or cashews)
  • 1/2 cup seeds (try flax seeds, pumpkin seeds, and/or sunflower seeds)
  • 1/4 tsp sea salt
  • 1 tsp pure vanilla extract

Instructions

  1. Combine oats, cinnamon, ginger, allspice, nutmeg, cloves, brown sugar, nuts, and seeds into a large bowl, set aside.
  2. In a small pot, melt butter or coconut oil over low heat. Stir in maple syrup and molasses.
  3. Remove the pot from the heat and stir in the salt and vanilla extract.
  4. Pour the maple syrup mixture into the bowl of the oat mixture and stir together until all the ingredients are evenly coated.
  5. Pour the mixture onto a large sheet pan. Spread evenly around the pan.
  6. Bake for about 30 minutes, stirring every 10 minutes.
    1. When stirring every 10 minutes, taste test for the perfect crunchy texture.
    2. Granola can burn very easily so be sure to check and taste every 10 minutes.
  7. Remove from the oven once cooked and let cool before eating.
    1. The granola should be golden brown and with a crunch to it.

Notes

Remember to check the granola every 10 minutes (max!) to prevent it from burning.
