This quick recipe that is perfect for busy nights because it takes less than 30 minutes to throw together and you can even save more time by prepping the chicken ahead of time like we do!
If you do not follow a paleo diet you could also add brown rice, black beans, or quinoa.

Ingredients

- 1 lb ground chicken (or your choice of meat) + ingredients used in this Honey Chipotle Ground Chicken recipe
- 3 green bell peppers
- 1 avocado or guacamole
- Chopped greens (spinach, kale, etc)
Instructions
- Preheat oven to 350 degrees
- Brown the chicken using our Honey Chipotle Ground Chicken recipe
- Wash and cut the green peppers
- Stuff the peppers with cooked meat and shredded greens
- Cook stuffed peppers for 20 minutes
- Top with avocado or guacamole
- Prep Time: 5 minutes
- Cook Time: 20 minutes
