Oatmeal Cinnamon Raisin Cookies on a brown plate

My favorite Sesame Street character was ‘Cookie Monster.’ I LOVED to watch him crumble up and devour his cookies in one fell swoop! Cookies make me happy, but too many cookies leave me bloated!  So, having this recipe to share with you REALLY makes me happy!

Healthy Oatmeal Raisin Cookies

Ingredients

Scale
  • 1/2 cup No Sugar Added Applesauce
  • 1/3 cup Sucanat sugar OR Ideal Brown No Calorie Sweetener
  • 2 egg whites
  • 1 tsp pure vanilla extract
  • 2 Tbsp water
  • 2 cups old fashioned oats
  • 2/3 cup whole wheat pastry flour
  • 1/4 tsp sea salt
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with Parchment Paper (this is different than wax paper!)
  2. Mix all ingredients together in a large bowl using a spoon.
  3. Spoon mixture onto the lined baking sheet.
  4. Bake for 15 minutes.
