TURKEY MEATLOAF MUFFINS
Try this recipe for those days when you are in a hurry. Make a batch of these Turkey Meatloaf Muffins at the beginning of the week & grab them as you need a quick, clean meal. Anytime I eat these around someone they always ask me for the recipe. They are good hot or cold & I have recently started putting a little bit of mustard on top…DELICIOUS!
Also, if turkey isn’t your thing, you can substitute ground chicken breast for this recipe or any recipe of ours that calls for lean ground turkey.

Turkey Meatloaf Muffins

Description
Try this recipe for those days when you are in a hurry. Make a batch of these Turkey Meatloaf Muffins at the beginning of the week & grab them as you need a quick, clean meal.
Ingredients
- 2 lbs lean ground turkey (or ground chicken breasts)
- 3 egg whites
- 1 cup of quick cooking oats (substitute gluten-free quick cooking oats)
- 1/2 tsp ground cumin
- 1/2 tsp dried thyme
- 2 tsp dry yellow mustard
- 2 tsp black pepper
- 2 tsp chipotle pepper spice
- 2 tbsp garlic powder (2 cloves, minced)
- 2 celery stalks, finely chopped (approx 1 cup)
- 1 small onion, finely chopped (approx 1 cup)
Instructions
- Preheat oven to 375 degrees
- Line baking sheet with foil
- Mix all the ingredients together in a large bowl
- Roll the mixture into balls & place on your baking sheet or in a muffin tin
- Bake for 40 minutes (This may vary depending on your oven. I would suggest using a meat thermometer to ensure your meat is fully cooked)

I added a half cup of finely chopped colorful peppers, along with a teaspoon of Worcestershire sauce…..yum ! Everyone enjoyed this and it is completely gluten free! Thank you!

I used to make these when I first started with Jamie’s 12 week plan. They are so delicious and moist. Used to make a large batch and then freeze them. I highly recommend them.

Great recipe to meal prep for the week! Easy to make; I’ve been making these for a few years. For my own personal taste, I found that 1/2 tsp spice for 2 pounds of ground turkey was not nearly enough, so I actually used 1 tsp per pound. To me it has more flavor.

Try making at start of your week for your meal prep. I eat 2 at my meals w/a nice salad or roasted veggies (beets & sweets)! I substitute fresh broccoli florets from
Produce section. I used gf quick oats. I also add celery salt.
They store in fridge nicely in a large ziploc and make it easy for my clean eating plan. Dip in brown mustard and sriracha!
