APPLE CINNAMON PROTEIN BARS

These lovelies are just that – totally sweet with a little piece of fall… The crisp air, the smell of campfires, leaves scattered on the ground, and the smell of caramel apples. These are totally scrumptious and won’t mess with your diet at all. Take a look at the recipe and the macros – they are divine.

THINGS TO NOTE:

Does it matter if I use a glass pan? Can I use a non-stick pan? YES! It does matter! For some reason, you get a much more cake-like consistency if you use a glass pan – trust us!

Store these in the refrigerator or freezer since they do not have preservatives and will spoil if left out.

Ingredients

Scale
  • 4 scoops of vanilla whey protein powder
  • 1/2 cup oat flour
  • 3 egg whites
  • 1/2 cup low-fat cottage cheese
  • 2 tsp baking powder
  • 1/4 tsp sea salt
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 cup Stevia in the Raw
  • 1 tsp pure vanilla extract
  • 4 oz water
  • 1 medium granny smith apple – grated

Instructions

1. Preheat oven to 350 degrees Fahrenheit

2. Spray a glass baking pan with olive oil spray to prevent sticking

3. Combine the following ingredients in a bowl, whisking together to combine. Set aside.

  • protein powder
  • oat flour
  • baking powder
  • sea salt
  • cinnamon
  • nutmeg
  • allspice

4. Using another bowl, combine the following ingredients, whisking together to combine:

  • water
  • egg whites
  • Stevia in the Raw
  • low-fat cottage cheese
  • vanilla

5. Add wet ingredients (2nd bowl, step #4) to dry ingredients (1st bowl, step #3), whisking to combine
6. Fold in grated apple and mix to combine
7. Pour batter into an 8X8 glass baking pan
8. Bake for approximately 25-28 minutes

Notes

Remember to store these in the refrigerator or freezer since they will spoil if left out (because they have no preservatives)

    What size baking pan for this? It only says a glass baking pan…..

      Hi Kendra, We use an 8X8 Pyrex glass dish for this recipe. I’ll update that information, thanks for letting me know.

        Thanks! While making the recipe tonight, I also came across the problem that there is 4 oz water listed in the ingredients, but not mentioned to add in to the recipe. I looked up the original recipe and didn’t see the water. Hopefully it turns out okay without it!

          This recipe must have not transferred over correctly when we moved from one platform to the other. I’m so sorry! I’ve actually made these protein bars without that extra liquid and they were fine. I hope they were for you too!

    What size is the protein scoop on this recipe? I tried it using my Vega Pure protein scoop and it made way too much dry ingredients. Can you break it down in tablespoons?

      Hi Gina! I have not made these in quite a while but for the protein powder we use each scoop weighs 28 grams. But you are correct, 4 scoops sounds high. I will try to make these again soon to see what is going on. We had a few other questions about this recipe so I’m starting to wonder if it didn’t transfer over from our previous website correctly. I think 2-3 scoops sounds like a more accurate number that should be used.
