Blueberry Crumb Cake Muffins are a dessert and/or breakfast recipe that everyone in your family will eat! This recipe is phenomenal and is gluten-free and clean eating approved. You have to try it!

- 1/2 cup unsweetened applesauce
- 1 small banana, peeled
- 2 eggs
- 1 egg white
- 1 cup unsweetened almond milk
- 1 TBSP pure vanilla extract
- 1 TBSP pure maple syrup
- 1 cup gluten-free oat flour
- 1 cup coconut flour
- 1/2 cup Stevia in the Raw
- 2 tsp baking powder
- 1/4 tsp sea salt
- 1 1/2 cups frozen blueberries
Instructions
- Heat oven to 375 degrees Fahrenheit
- Using a large food processor or blender, puree applesauce and banana until smooth
- Add eggs and process for approximately 45 seconds
- Add remaining wet ingredients and mix
- Add dry ingredients and mix thoroughly
- Remove the blade from the food processor and fold blueberries into the batter mixture
- Add to a muffin tin and bake for 17-20 minutes or until golden brown
