Oh my goodness! This recipe tastes just like the fried rice at the Hibachi restaurant except it is not even rice and it has NO SOY! Say hello to Cauliflower “Fried” Rice. It’s clean eating, paleo, and AIP friendly (omit the egg for AIP).
CAULIFLOWER “FRIED” RICE
Cauliflower is such a versatile vegetable. Who knew you could make pizza crust, mashed potatoes, alfredo sauce, or even cheesy breadsticks (find all of these recipes below!)? Well, we have come up with another way to use that cauliflower – make it into a clean version of your hibachi favorite, fried rice! This recipe is actually healthy and uses coconut aminos in place of soy sauce. There’s no need to add the extra carbs if you don’t have to – here’s the recipe!
To make this recipe even easier you can use frozen riced cauliflower which can be found at most grocery stores (we buy ours from Costco). Add protein such as chicken, sausage, grass-fed steak, or shrimp to turn this into a delicious entree instead of just a side dish.

Cauliflower “Fried” Rice
- Total Time: 22 minutes
Ingredients
- 1 large head of cauliflower, cut into florets
- 2 TBSP coconut oil
- 1 small sweet onion, diced
- 1.5 cup zucchini, diced
- 1 cup mushrooms, diced
- 2 cup carrots, shredded
- 2 TBSP coconut aminos
- (OPTIONAL) 1 whole egg, scrambled
Instructions
- Place cauliflower florets in a food processor and pulse until you create cauliflower “snow” or it begins to look like rice (or cook your riced cauliflower as instructed on the bag).
- Heat coconut oil in a large skillet over medium-high heat.
- Add diced onion and cook until onions become clear, stirring often – approximately 6-7 minutes.
- Combine zucchini and mushrooms in a pot with onions and cook for an additional 3-4 minutes.
- Add carrots to pan and saute for 2 minutes.
- OPTIONAL: Add scrambled egg and stir to combine.
- Combine cauliflower “snow” with the mixture in pan and continue to heat for 1 minute.
- Add coconut aminos, stirring thoroughly to combine.
