Wow! I can't believe January is almost over and the Super Bowl is this weekend! Are you ready? We wanted to share one of our Super Bowl favorites with you. Essentially, this is a puree, but you can process it more or less depending on it's function - it can be a dip, an appetizer, an ingredient or even a side dish!
Guilt-less Black Bean Puree and Dip
2 cans organic, low sodium black beans, rinsed
2/3 cup diced sweet yellow onion
1/2 cup 2% plain greek yogurt
1 clove garlic
1/2 TBSP olive oil
2 tsp chili powder
2 tsp cumin
Add all ingredients to a food processor and pulse to desired consistency - it's that easy!
Makes approximately 12 servings.
