These homemade Lemon Protein Bars are the perfect combination of sweet and tangy!
LEMON PROTEIN BARS
When life gives you lemons make lemon protein bars! We buy a large bag of lemons from Costco almost every week and I love to use them to make these bars and our lemon cream steel cut oats especially during the warmer months.
My favorite candy has always been Sour Patch Kids because I love that sweet and sour taste, which these have! If you also love that combination try our Sour Patch Grapes Fruit Candy recipe.
VARIATIONS AND TIPS TO MAKE THESE PROTEIN BARS
- This recipe calls for one cup of oat flour but you could also use all quick oats or a combination of both.
- If you buy lemon juice make sure it’s pure lemon juice. You can also squeeze fresh lemons. Use a lemon squeezer to make the job easier!
- Since these protein bars (along with all of our other homemade protein bars) do not have preservatives they will spoil if left out on the counter. You must store them in a refrigerator or freezer.

Description
These homemade Lemon Protein Bars are the perfect combination of sweet and tangy!
Ingredients
- 1 cup oat flour (substitute gluten-free oat flour)
- 2 scoops vanilla protein powder
- 4 egg whites
- 8 oz unsweetened applesauce
- 1/4 tsp salt
- 1/2 tsp baking soda
- 5–6 oz lemon juice (or 4–5 lemons if squeezing fresh lemons)
- 1/3 cup Stevia in the Raw
Instructions
1. Preheat oven to 350 degrees Fahrenheit
2. Mix the following together in a large bowl:
- Oat Flour
- Whey Protein
- Salt
- Baking Soda
3. Mix the following together in a small bowl:
- Lemon Juice
- Egg Whites
- Applesauce
- Stevia in the Raw
4. Combine the ingredients from the small bowl into the large bowl and mix together
5. Spray an 8X8 dish with non-stick spray and add the batter to the dish
6. Bake for 25 minutes
Notes
Store these in the refrigerator or freezer since they do not have preservatives & will spoil if left out.
