Clean Eat Recipe :: Cucumber Zings

Did you try our Simple Baked Cinnamon Grapefruit recipe from last week?  Here is another very easy snack recipe we LOVE!  We have named them "Cucumber Zings".

Cucumber, as many as you would like
Sea Salt

1. Slice a cucumber & place into a bowl
2. Pour Apple Cider Vinegar over the slices until covered
3. Season with sea salt and pepper

  1. Thanks for this quick and simple snack recipe! Do you think this is best eaten right away, or would it store well for a couple of days? Just doing my first Sunday prep and looking for quick snacks I can grab and go during the week!

    1. I think it is actually better if you let it sit! What I usually do is cut up a cucumber and put it in the ACV in a Tupperware container and take it to work. I will eat 1/2 with my morning snack and the rest with my afternoon snack. Then I do the same thing the next day. You could cut up a few at a time but just be aware that it soaks up more of the ACV so it gets stronger!

  2. I make this often (it's a Belgian staple ;p) and I always put any leftovers in the fridge for the next day or so. I think they taste even better as time goes by :)
    I usually add a bit of olive oil to the mix as well, to off-set the vinegar taste just a wee bit, but, of course, that adds oil to your diet ;p

  3. When I was growing up, we always added onion to the mixture, gave an added flavor boost.

  4. When I was growing up, we visited "the family farm," run by my great aunts. They always served this. I have made it for us several times.

  5. Cherry or grape tomatoes would be good to add, too!
