Clean Eat Recipe :: Jamie Eason's Monster Meatloaf

If you like Jamie Eason's Turkey Meatloaf Muffins...you need to try this recipe!  We make this almost every week!  We don't even like Meatloaf but we love this!

Jamie Eason's Monster Meatloaf


Ingredients:

1 1/2 cups chopped onion & red peppers
1 tsp salt
1 tsp pepper
1/2 tsp dried thyme
1 tsp minced garlic
1/4 cup low sodium soy sauce (we use liquid aminos)
3/4 cup low sodium chicken broth
2 tsp tomato paste (no salt added)
3 lbs extra lean ground turkey (or chicken breasts)
1 cup quick cooking oats
4 egg whites
1 cup reduced sugar ketchup

Directions:
1. Preheat oven to 350 degrees & spray 9X13 Pyrex dish with non-stick spray.
2. In a large saute pan, cook the onions & peppers with salt, pepper, & thyme until onions are translucent (about 5 minutes).
3. Add garlic, soy sauce, chicken broth, & tomato paste, mixing until heated through.
4. Set mixture aside to cool.
5. In a large bowl combine ground turkey (or chicken), egg whites, oats, & sauteed mixture (cooled).
6. Mix by hand until all incorporated & press flat into the 9X13 Pyrex dish.
7. Spread ketchup in an even layer on top of the prepared turkey (or chicken).
8. Place in the oven to bake for 1 hour & 20 minutes.


Makes 24 servings

He & She Tip: We usually do not use an entire cup of ketchup, instead we will add ketchup & mustard to the top once we are ready to eat the meatloaf.

- Blue Diamond: Request coupons via "contact us" on their webpage.  We use their unsweetened almond milk & purchase their almonds when they are BOGO at Publix!

- Heinz: Request coupons via "contact us" on their webpage.  We *sometimes* use their reduced-sugar ketchup (it has sucralose in it so don't use very much or use it very often).

He & She Tips:
* Look in your pantry & refrigerator & write down the items you purchase frequently.
* Find the product's website & fill out the "contact us"...simply ask for coupons & provide your address! (Type up a document on your computer & just copy & paste it for each company.)
* Set reminders on your calendar on the same day each month so that you remember to request the coupons!

Product Review :: SweatyBands!

FINALLY!! It's here! An adorable accessory that is as functional as it is cute!


I stumbled across SweatyBands on the web while I was in search of fabric headbands for the gym and teaching aerobics classes that don't slip - I am so tired of the national brand ones saying they have extra non-slip grip stuff and then 15 minutes into my class... it's three-quarters of the way off of my head!

Not any more!! Thanks to Donna and her ingenious little headband (that's available in a bilizillion different color, themes and even sorority themes) I no longer have to worry about that! I have to admit, when I saw motto "OMG... they don't slip!," I was a little skeptical. However, after teaching an hour long Zumba class, where we are jumping, dancing, salsa-ing and shaking it for all 60 minutes, it NEVER ONCE moved from the original place I left it!

These little puppies are $15/band or you can buy the 6-pack of the month for $84.16. As I mentioned earlier, if you couldn't find a color you liked... you have a problem! (Just kidding!) Clean Eat Recipe :: Jamie Eason's Turkey Meatloaf Muffins

Try this recipe for those days when you are in a hurry!  Make a batch of these at the beginning of the week & grab them as you need a quick, clean meal!  Yes, another amazing recipe from Jamie Eason!  Anytime I eat these around someone they always ask me for the recipe!  They are good hot or cold & I have recently started putting a little bit of mustard on top...DELICIOUS!

Jamie Eason's Turkey Meatloaf Muffins


Ingredients:
2 lbs ground turkey (we use ground chicken BREASTS)
3 egg whites
1 cup of quick cooking oats
1/2 tsp ground cumin
1/2 tsp dried thyme
2 tsp dry yellow mustard
2 tsp black pepper
2 tsp chipotle pepper spice (we could only find this at Whole Foods)
2 tbsp garlic powder (2 cloves, minced)
2 celery stalks, finely chopped (approx 1 cup)
1 small onion, finely chopped (approx 1 cup)

Directions:

1. Preheat oven to 375 degrees.
2. Line baking sheet with foil (Jamie uses muffin tins but they get very messy!).
3. Mix all the ingredients together in a large bowl.
4. Roll the mixture into balls & place on your baking sheet or in your muffin tin.
5. Bake for 40 minutes (This may vary depending on your oven.  I would suggest using a meat thermometer to ensure your meat is fully cooked).
Makes 12 muffins

Serving size:

   Men: 4 muffins
   Women: 2 muffins

Well, I am finding that it's really hard to keep my focus today. I know that I don't feel well enough to workout, but it's hard not to beat myself up about it.

Clean Eat Recipe :: Clean Comfort Zucchini Lasagna

Picture it... you've just come home from a busy day at the office, it seemed that nothing went right today and all you want to do is bury yourself in a tub of chocolate ice cream or a vat of homemade macaroni and cheese.  WAIT! DO NOT DO THIS! It will only make you feel worse.  Turn your day from bad to fabulous with my newest recipe - Clean Comfort Zucchini Lasagna. There are no pasta noodles or ricotta cheese, but it's packed with protein and sure to be your new go-to clean comfort food! (Note: It's gluten free and has no added sugar if you pick the right spaghetti sauce - see below)


Clean Comfort Zucchini Protein Lasagna

Ingredients:
1 large sweet yellow onion, chopped
1 lb 99% fat free ground turkey breast
1/2 tsp sea salt
1/2 tsp black pepper
1 tsp garlic powder
3 large or 4 small zucchini, sliced thinly lengthwise
24 oz low-fat or 1% or 2% cottage cheese
1 jar of spaghetti sauce (I just discovered Monte Bene sauce... NO SUGAR and all fresh ingredients, absolutely nothing I couldn't pronounce!)
Non-fat or low-fat mozzarella cheese, shredded

Directions:
Preheat oven to 350 degrees F.
1. Combine onion, ground turkey breast, sea salt, black pepper and garlic powder in a skillet over medium heat, cooking the turkey until it is no longer pink.


2. Layer zucchini in the bottom of your lasagna pan (I would suggest a more substantial pan, such as ceramic) just as you would lasagna noodles, covering any gaps with additional slices of zucchini.


3. Spread 12 oz of cottage cheese over the layer of zucchini.


4. Add ground turkey mixture over cottage cheese, careful to spread turkey evenly.


5. Layer approximately 1/3 of the spaghetti sauce over the cottage cheese and turkey mixture.


6. Repeat steps 2-5.
7. Place your last layer of zucchini over the second layer of cottage cheese, turkey mixture and cottage cheese.
8. Top with tomato spaghetti sauce and add shredded cheese.


9. Cover with tinfoil and bake in oven for 1 hour at 350 degrees.
10. Remove tinfoil and bake for an additional 5 minutes at 350 degrees to brown cheese.
11. Let rest for approximately 10 minutes and Enjoy!

He & She Tip: This lasagna will be a little runny because of the consistency of the tomato sauce, moisture in the cottage cheese and the amount of water that zucchini hold. I found that I just scooped out my lasagna and the excess liquid stayed in my pan.

Approximate Nutritional Information:
6 servings, 380 calories, 12.5 g fat, 18.5g carbs, 48.8g protein.

He and She Save :: Clean Coupons! (Part 1)

You have probably heard this before but you cannot put a price on your health...but we can help soften the blow!  I am not one to cut coupons because I feel like it is a waste of my time because all I find are coupons for processed JUNK!  Instead I decided that I would write down a list of all the items we purchase on a weekly basis, contact them via email & ask nicely that they send me coupons.  It worked!  The two listed below are the ones that we have received coupons from so far.  I'll keep you updated when I hear back from more!

Crystal Farms All Whites: Request coupons once every three months via "contact us" on their webpage.

- Food For Life (Ezekiel Products): Request coupons once per month via "contact us" on their webpage.  We have noticed that they are not always consistent in sending them out but we will take what we can get!  Our local Publix doubles these coupons!

He Travels :: Fast(er) Food Pick - Chipotle

Let's face it, when you are pressed for time on the road, it's hard to actually find a healthy alternative to the local fast food joint serving up mystery meat and greasy french fries. Thanks to a little mexican food chain, Chipotle, my search for better, fast(er) food just got easier. You can also find them in airports like Washington-Dulles International (IAD).

Chipotle supports local farmers and prides itself on serving meats that are humanely raised in natural environments and are fed diets that are 100% antibiotic-fed free, as well as free from any growth hormones and additives. Sounds pretty good, huh?

If you are on the go, it get's even better. Chipotle has just launched their new iPhone App where you can order your burrito, taco or salad in seconds and it's waiting for you by the time you get there. That's convenient clean eating!


Breakdown of my Meal:
Cilantro-Lime Brown Rice - 130 cal
Black Beans - 120 cal
Chicken - 190 cal
Roasted Chili-Corn Salsa - 90 cal
Tomatilla Sauce - 15 cal
1/2 of the normal portion of cheese - 50 cal
Romaine Lettuce -  10 cal
TOTAL: 605 calories

Motivational Monday :: Be the best that YOU can be!

Be the best that YOU can be & stop comparing yourself to others!  One of my goals is to remind myself that there will always be someone faster, stronger, better, etc than me but that I need to focus on being the best ME.  Some people have connections in life to get them the things that they want or need & others don't.  I believe that makes the ones who don't....STRONGER!

Clean Shopping (Part 2) :: Publix

We are regulars at our local Publix.  We shop at Publix because it is the closest grocery store out here in the sticks!  The items below will give you an idea of what we purchase on a weekly basis.  We don't usually shop around for the lowest price because, honestly, we feel like our time is worth more.

Our typical shopping list:

Boneless, skinless chicken breast (we usually have Publix grind this for us)
Extra-lean ground turkey
Grass-fed beef
Crystal Farms 100% egg whites (pasteurized cartons)
Organic, free-range eggs
Low-fat cottage cheese
Baby food
Quick oats
Food for Life Products (Ezekiel bread, english muffins, tortillas/wraps, etc.)
Unsweetened vanilla almond milk
Vegetables (red, sweet, and green onions, cauliflower, asparagus, etc.)
Fruits (bananas (for post-workout carbs), apples, various berries, lemons and limes, etc.)


Basically, we are "perimeter" shoppers.  We spend very little time in the inner sections of the grocery store because that is where you will find all of the processed junk loaded with preservatives, sugars, and genetically-modified ingredients (for an exhaustive list of GMO foods and brands, go here - chances are, if it's made by any well-known brand, it's genetically modified or engineered...a.k.a. fake food).

Toxic Eat Clean Skeptics - Handling Friends and Family

It's weird that you eat six meals a day, right? What???? NO SUGAR!! Huh? One can exist like that? How do you do it? Can you help me even though I will never really take your advice? You don't really want to look like that do you?

If you have started your journey to a Clean Eating lifestyle, I'm sure you have heard these questions and comments, among others. It's not easy, but you are not alone!



"Toxic" friends and family are a large problem when switching over to eating clean. A problem that you are going to have to overcome if you want to be successful. I have put together a quick list of things that are helpful to remember as you become healthy and look forward to the future.

1. This is your decision - NOT theirs. You are choosing right now to eat this way. Try not to complain about how long you are spending in the kitchen cooking or chopping veggies - it will only make your situation worse by giving them something negative to "battle" with you about and turn them off of eating clean if they were ever to consider it. Eliminate excuses!

2. Let them know how much this means to you. Ask for their support, but assure them you are not trying to convert them or in no way, shape or form are you going to judge them for what they are eating. In fact, shortly after Jim and I started blogging, we had a birthday celebration for him. I went out of my way to make  clean treats (you can find many of the recipes on the blog!) and treats that were not-so-clean for other members of our family. I didn't want them to feel ostracized because they had come to our house. It's their decision what they eat - I made sure that Jim and I were taken care of with our healthy treats and that's all that matters! At the end of the night, I packed up what they wanted to take home and trashed the rest (I know, shame on me for wasting food, but sugary food isn't good for anybody anyway!)

3. Give them a little insight into how to eat clean so they know what to expect. Both mine and Jim's families are great when it comes to our lifestyle (although don't let me fool you - we took a LOT of flack in the beginning). They know we eat six meals a day and now think nothing of me bringing my own food to a family meal (now they even try to cook something we can eat!) or popping a pack of grapes and almonds out of my purse for a midday snack. The more they understand that food doesn't consume your life and that you are just as normal as them, the more they will become comfortable with it.

4. Give it time. You are a pioneer of sorts to them if they are not knowledgeable about eating clean. Let them observe you and how your lifestyle fits with theirs. Two things could happen - they could get it and realize you aren't much different OR they could flip out and never want to talk to you again (this sounds nuts, right? Let's hope that doesn't happen).

4. People are by nature, insecure about their appearance/weight. In my experience, this is the answer to why people will snub you or mock you for eating clean - RIGHT HERE! I wish we could change this, but when most people see someone succeeding, they begin to question their own success. If you are mocked, or snubbed by a friend or relative, it's 99% of their own insecurity. Why wouldn't someone want to feel better, look better and enhance their health?
