Saturday is the "First Day of Fall" - celebrate by making these delicious Pumpkin Protein Cookies! The recipe was created by Michelle LeSueur, BEP, CNC, CSN, CPT.
Ingredients:
2 heaping Tbsp almond butter or natural peanut butter
1 heaping Tbsp pumpkin
3 Tbsp quick cooking oats
2 scoops vanilla whey protein
2 Tbsp Xylitol
1 oz egg whites (1-2 egg whites)
1/4 tsp baking soda
Directions:
1. Using a whisk or fork, mix all ingredients.
2. Bake at 350 degrees for 6 minutes.
Macros (per cookie - makes approx 9 cookies):
Calories: 60
Carbs: 4g
Protein: 6g
Fat: 2g
Sugar: 1g

What is Xylitol? And where can you find it? Or can I substitute something for it? Thanks! These look delicious!
ReplyDeleteIt a sweetener that is commonly used in sugar free gum and some mouth rinses. Please be careful with Xylitol and your dogs and cats. With the amount of Xylitol in these cookies even 1 cookie for a small dog could kill it. Toxic to pets. Okay, I guess, for people.

ReplyDeleteQuick cook oats aren't clean eating. Definitely use the old fashioned kind.
ReplyDeleteWe usually use Quaker Oats (quick - 1 min), the only ingredient is 100% Natural Whole Grain Quaker Quality Rolled Oats so this kind is fine to use!

DeleteDon't know what I did wrong but they needed to cook for 9 minutes in order to make them firm. I used natural peanut butter so maybe that's why?? Still tasted good though =)
ReplyDeleteIt may have to do with the different brands of peanut butter. I like all of my cookies and protein bars still kind of "raw" so I usually use the lower end of time range! :-) Glad they turned out for you!
DeleteI made these tonight for the second time and they turned out looking like little puffed up biscuits both times. I don't know what I did wrong. I used natural peanut butter and stevia in the raw instead of xylitol. Maybe that could be why???
ReplyDeleteWe do use natural peanut butter so that shouldn't be the problem so I bet it is the Stevia in the Raw. I'm sorry they didn't turn out. :-(
DeleteDid you use too much baking soda, or use baking powder on accident? Or did you add too much egg white?... not criticizing, just wondering why they didn't work for you :/ that stinks. I hope you can figure it out...
Deletei made these tonight, switching Truvia for the xylitol (same amount). I didn't feel like making the dough into cookies, so I spread it in a small Pyrex dish and baked it for 11 minutes. They are great as bars!
