This is Scott's favorite protein bar & it is making its way to the top of my list! Try it out & let us know what you think!
Ingredients:
1/2 cup Ideal Brown No Calorie Sweetener
1 4 oz jar baby food applesauce
2 tsp ground cinnamon
1 1/2 tsp Ground Ginger
1/2 tsp Ground Cloves
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp vanilla extract
4 large egg whites
1 15 oz can of raw pumpkin
----
2 cups Oat Flour
2 scoops vanilla whey protein
1/2 cup unsweetened almond milk
1/2 cup chopped walnuts (optional)
1. Preheat oven to 350 degrees.
2. Spray 9 X 13" Pyrex dish with non-stick spray.
3. Combine the first 11 ingredients & mix well.
4. Add the final 3 ingredients (4, if adding walnuts) & mix until incorporated.
5. Spread batter into the Pyrex dish & bake for 30 min.
Makes 24 squares.

Calories: 47
Fat: 0.7 g
Carbs: 8 g
Protein: 3.7 g
Macros (with walnuts) - 1 square
Calories: 63
Fat: 2.3 g
Carbs: 8 g
Protein: 4 g
He & She Tip: We highly recommend using the walnuts - we like the little "crunch" it gives!
You MUST store these in the refrigerator or freezer as they will spoil because they have no preservatives!

ReplyDeleteYes Jenay, you can use Sucanat. Just keep in mind it will change the nutritional values of the bars and you will want to adjust your daily caloric intake accordingly.

ReplyDeleteI found the Ideal brown sugar blend at Food Lion. I also found it at Kroger (just a generic version).
DeleteI have not been able to find it in any stores. I have to order ours on Amazon! Depending on where you live & how big the store is that you shop at they may have it in the organic section. Below is a link for the one we use!

I am new at clean eating and am confused by whey protein, I have some it says 100% whey protein but when you look at the ingredients there are like 15+ thing I can't pronounce, that doesn't seem clean to me....thank you soo much for your help and the time you put into this site!!!!

DeleteI just made these and they taste great! Mine were doughy and I was wondering if I baked them long enough. Are they supposed to have a cake texture or doughy texture? Either way, they taste great!
ReplyDeleteErin, it can go either way! Whitney and Scott like theirs a little gooey. Jim and I like ours a little more like a cake texture so we bake them a little longer.

DeleteMade these and was ridiculously happy with the results! The cake texture made me feel like I was getting a cheat. Going to try the lemon protein bars next. I've been eating clean for six months and this is a great addition to my meal plan. Definitely helps maintain my sanity when the mid-week craving hits!

I have an 11 year old who over the years has been anaphylactic to many allergens(Dairy, eggs, wheat, fish, peanuts, tree nuts). He is now only allergic to dairy and nuts, including peanuts. He CAN eat almonds! What are your suggestions for no whey or dairy for protein bars?

DeleteI have made this recipe 3 times with substituting the ideal brown no calorie sweetener with sucranat and adding a tablespoon of ground flaxseed. This is a wonderful snack. Tastes almost as sweet as my regular pumpkin bread make with sugar. I'm thinking of adding a mashed banana next time. Great recipe. Thanks
ReplyDeleteI made these and substituted pure maple sugar for the ideal brown; otherwise made them as written. OH MY! These were so good! Very cake-like and satisfying. I cut and wrapped individual servings and put them in the freezer. Will definitely be keeping these in my protein snack rotation!
