Ingredients:
1 large head of cauliflower
3/4 cup lowfat cottage cheese
1 TSP garlic powder
1/2 TSP ground black pepper
3/4 cup lowfat cottage cheese

Directions:
1. Prepare the cauliflower by rinsing and separating cauliflower and cutting into florets.
2. Steam cauliflower for approximately 10 minutes until soft and tender.

3. Remove cauliflower from steamer and place in a large mixing bowl or stand mixer.
4. Add remaining ingredients.
5. Stir with an electric mixer or stand mixer, breaking up cauliflower florets into pieces/chunks until mixed and desired texture/consistency is achieved.
6. Enjoy!

I just recently found your blog and have been enjoying some of the recipes. I have been going gluten, dairy and sugar free for the last 2 years (faithfully within the last 9 months). I can figure out how to substitute most of the dairy in your recipes but I have yet to figure out what to use in place of cottage cheese....maybe plain yogurt? But i'd hate to heat up yogurt...it would no longer benefit you. hmmmm. any suggestions?

DeleteIt can be tough to incorporate both gluten free and dairy free into your lifestyle.
For this recipe, I would suggest substituting soy yogurt (regular yogurt is still considered dairy as is greek yogurt since it is made with milk). You could also substitute a non-dairy cheese for the cottage cheese like almond cheese, etc.

I love mashed cauliflower...and this is a little different way to make the recipe, not sure how "clean" greek yogurt is, but I used non fat, plain....

How big are the servings?
