1/2 c Whole Wheat Pastry Flour
1/4 c Ideal Brown Sugar Blend
1 Tbsp Baking Powder
1/2 tsp Sea Salt
1 egg
1 c Plain Low-fat Unsweetened Kefir
1/4 c Unsweetened, No Sugar Added Applesauce
1/2 c fresh Blueberries
Directions:
1. Preheat oven to 425 degrees F. Spray a muffin tin with olive oil.
2. Combine dry ingredients in a large bowl, whisking together.
3. Add wet ingredients to dry ingredients, whisking to combine thoroughly.
4. Fold in blueberries.
5. Pour batter into individual muffin tins.
6. Bake for 15-20 minutes depending on your oven.
Gluten Free Version: Use Gluten-Free Flour as an alternative

Is this gluten free?
ReplyDeleteWith the recipe as I posted, it's not; however, you can easily make it gluten free! Just switch out the whole wheat flour for a gluten free flour and voila! Gluten free!

ReplyDeleteIt has 425mg of sodium and 3g of sugar. This does depend on your brand of kefir though!

ReplyDeleteKefir is fermented milk - it's high in probiotics and very good for the gut. You will find this in the natural foods/dairy section of your grocery.
DeleteMy Kroger has the brown sugar blend in the sugar aisle. You just want to look at the ingredients to make sure you are not getting the splenda brown sugar blend. (look for Ideal)

ReplyDeleteYou definitely could. You would not get the same probiotic benefits, but if you aren't interested in that, it's not that big of a deal.
DeleteIf you can buy the liter of kefir at your grocery store, check the expiration date. It will stay fresh in your fridge for about a month.
Do these need to be refridgerated? mine get mushy in the fridge!
ReplyDeleteThey shouldn't need to be refrigerated. I noticed that mine keep for about 3 days after baking non-refrigerated.
